A fresh and vibrant version of the Christmas turkey.
Ingredients
Serves 6-8
For the butter:
- Zest of 1 orange
- Zest of 1 lemon
- 75g softened butter
- 2 tsp harissa spice
- 1 tbsp chopped flat leaf parsley
For the turkey:
- 3kg Bord Bia Quality Assured breast of turkey
- 8-10 streaky bacon rashers
Method
For the butter:
- Beat the butter until soft and add in the harissa spice.
- Add in the zest of the lemon, orange zest and parsley.
- Beat until well combined and refrigerate until needed.
For the turkey:
- Preheat the oven to 190°C (375°F/gas mark 5).
- Place the turkey breast onto a roast tin (sitting on a trivet or over some roughly chopped vegetables such as carrots, onions, and celery).
- Rub the prepared flavoured butter generously over the skin, this is best using gloves. Cover the top with streaky rashers. And cover with tin foil for the first 1 hour 20 minutes.
- Place the prepared turkey breast in the oven and calculate your time, 20 minutes per 450g plus 20 minutes extra.
- The turkey breast will cook much quicker than a full turkey, so make sure to keep basting.
- Remove the tinfoil and allow the bacon to take on colour and the turkey to finish cooking.
- When cooked cover with foil to rest and keep warm.
