A one pan wonder from Lilly Higgins.
Ingredients
Serves 4
- 2 tbsp olive oil
- 500g gnocchi
- 250g cherry tomatoes
- 360g sausages
- 2 tbsp whole olives
- 250g baby mozzarella (drained weight)
- Small bunch of basil leaves
Method
- Preheat the oven to 200C. Tip the mozzarella into a sieve over the sink and leave to drain well. Drizzle a large tray with olive oil.
- Tip all the gnocchi onto the pan. Add the tomatoes and mix well to coat in the oil.
- Remove the casings from the sausages.
- Divide each sausage into four and roll each piece into balls. Add to the tray. Place the tray in the one and bake for 15-20 minutes, turning everything halfway through.
- Once cooked, leave to rest for a minute before scattering with the olives, mozzarella and basil leaves.
- Serve right away
