Ingredients

Serves 4

  • 2 tbsp olive oil
  • 500g gnocchi
  • 250g cherry tomatoes
  • 360g sausages
  • 2 tbsp whole olives
  • 250g baby mozzarella (drained weight)
  • Small bunch of basil leaves

Method

  1. Preheat the oven to 200C. Tip the mozzarella into a sieve over the sink and leave to drain well. Drizzle a large tray with olive oil.
  2. Tip all the gnocchi onto the pan. Add the tomatoes and mix well to coat in the oil.
  3. Remove the casings from the sausages.
  4. Divide each sausage into four and roll each piece into balls. Add to the tray. Place the tray in the one and bake for 15-20 minutes, turning everything halfway through.
  5. Once cooked, leave to rest for a minute before scattering with the olives, mozzarella and basil leaves.
  6. Serve right away
