A tasty autumnal treat.
Ingredients
- 1 x 8" disc of shortcrust pastry
- 3 small apples
- 1 tsp ground cinnamon
- 5 tsp brown sugar
- juice of 1 lemon
- 1 egg yolk, whisked
- Custard & Ice cream or clotted cream to serve
Method
- Pre-heat your oven to 185C
- Line a roasting tray with parchment paper and place on the disc of dough then put into the fridge for 20 minutes to rest.
- Peel, core and cut the apple into even sized wedges/thick slices.
- Place the apple into a bowl with the juice, 3tsp of the sugar and all the cinnamon. Mix well.
- Remove the pastry from the fridge and start placing the apples on the pastry, overlapping slightly and making sure to keep a 1" gap or more around the perimeter.
- Now pull the pastry up and over the edge of the apple. Turn the tray as you go until you've gone all the way around and closed up the edges. The apple in the center will still be exposed.
- Using a pastry brush, glaze the pastry you've just folded over the edge of the apples and then sprinkle it with brown sugar.
- Place into the oven for 35-40 minutes or until golden and glazed. Fan oven can be a little quicker so keep a close eye after 25 minutes.
- Serve with thick custard and ice cream or clotted cream.
