A delicious family dish.
Ingredients
- 2 large tortilla wraps
- 1 clove garlic
- 1 red onion, diced
- 1 chilli, de-seeded
- 50g Chorizo, diced
- 1 chicken breast, cooked and diced
- 1 tsp cumin
- 1 tsp paprika
- Small pinch of saffron
- 1 red pepper sliced
- 250g chopped tomatoes
- Fresh basil
- Olive oil
- Mozzerella cheese
- Black pepper
Method
- The first thing to do is get the frying pan up to a nice hot temperature, add in a drizzle of olive oil and then the veggies and chorizo. Cook this out until soft.
- Add in all the spices and cooked chicken, cook out for a further minute.
- Add in the chopped tomatoes, fresh basil and saffron. Simmer for another minute.
- Add the mix into a large tortilla wrap with the Mozzerella cheese, fold it over and toast in the oven or frying pan for two minutes at 180C, then slice into triangles for the whole family to tuck in and enjoy!
- I serve mine with a dollop of fresh sour cream and chives.
