Chicken curry with beans

Ingredients

Serves 2

  • 1 can beans (415g)
  • 1 small onion (diced)
  • 1 garlic clove (minced)
  • 1 small chili (diced)
  • 1 tsp grated ginger
  • 1.5 tbsp curry powder
  • 100 ml coconut milk
  • ½ tsp turmeric
  • ½ lime zested
  • 150g chicken fillet (cut into bite-sized pieces)
  • 100g cooked rice
  • Oil to cook the chicken
  • Garnish - wedges of lime, thin slices of red chili and coriander leaves

Method

  1. Heat a pan, add the oil and heat for 1 minute. Then add in the diced onions and cook for 2 minutes over gentle heat until they are translucent and soft, do not let them burn.
  2. Add in the chicken fillet pieces and cook on all sides for 2 minutes until they are slightly golden.
  3. Add in the grated ginger, chili and garlic and stir, add in the coconut milk, stir again, and add in the curry powder, lime zest and turmeric. Cook gently for a further 20 minutes until the chicken is fully cooked.
  4. In the meantime, cook the rice as per the instructions on the pack and set it aside. Pour the can of beans into a saucepan and heat gently.
  5. Add the curry, rice and beans to each serving plate and garnish.

Note: a vegetable like butternut squash, aubergine or tofu can substitute for the chicken. Low fat coconut milk can be used. Chilies can be left out. Curry powder can be halved for little ones. You can use any oil you prefer for frying.
