Back to School: Banana raspberry coconut oat bars

Ingredients

Makes 12 slices

  • 2.5 cups oatlets
  • I tsp baking powder
  • 2 eggs
  • 50g melted butter
  • I cup milk of choice
  • 1/3 cup brown sugar
  • 1/4 cup desiccated coconut
  • I tsp vanilla extract
  • I cup raspberries (I used frozen but you can use fresh!)

Method

Mix all ingredients leaving the berries till last.
Fold in berries gently.
Add mixture into a lined baking tin
Bake on 180° for approx 25-30 mins or until top is golden brown
Leave to cool before cutting
