Ingredients

- 500gr lasagna sheet
- 400gr smoked salmon
- 400gr courgette
- 1lt besciamel
- 2 shallots
- 300gr diced mozzarella
- 150gr parmesan
- EVO
- Salt
- Pepper
- Butter
Method
- First chop the shallots and put them into a pan with 2 spoons of EVO, let it golden, in the meantime grate the courgette and add them to the shallot, add salt & pepper and let all cook for 5 minutes at high flame.
- Cut the salmon into strips.
- Keep on the side 100ml of besciamel.
- Now you can prep the sauce mixing together besciamel, salmon, courgette & shallots.
- Start to build the lasagna, take an oven tray and put few flakes of butter on the bottom, now pour the besciamel.
- Then start your first layer with lasagna sheet, salmon & courgette sauce, then mozzarella and last parmesan.
- Now repeat until you fill the tray.
- Put in the oven fan 180°C for 40/50 minutes.
