Rich and flavourful, this dish makes the most of delicate sardines.

Ingredients

  • 3 tins of Shines Wild Irish Sardines (1 for the sauce and 2 to top the sauce with)
  • 3 cloves garlic
  • 1/2 -1 tsp chilli flakes
  • 1 can whole peeled tomatoes
  • 250ml passata
  • 1 tbsp capers
  • 1/2 cup kalamata olives
  • Zest of one lemon
  • Freshly ground black pepper
  • Fresh parsley
  • 1 1/2 cup Orzo pasta

Method

1. Heat the oil in a large pan and add in the chopped garlic and chilli flakes and cook out for a minute

2. Add the Shines Wild Irish Sardines to the pan with their oil and cook for 3-4 minutes stirring to ensure they break down.

3. Pour in the tomatoes and passata and break them down with a wooden spoon. Add in the capers, olives, lemon zest and cracked black pepper to taste.

4. Cook for 20-25 minutes until thickened. Meanwhile cook the Orzo according to packet instructions, roughly 6-8 minutes in boiling salted water.

5. Once the pasta is cooked and the puttanesa sauce is reduced, add in two extra tins of Shines Wild Irish Sardines and allow them to warm gently in the sauce.

6. Spoon the sauce over the Orzo and liberally sprinkle fresh flat leaf parsley all over.
