Ingredients
- 8oz flat rice noodles
- 3 tbsp rapeseed oil
- 3 cloves garlic
- 8oz Irish prawns uncooked
- 2 eggs
- 1 red pepper
- 3-4 spring onions
- 1 bok choy or spinach
- 2 limes
- 1/2 cup salted peanuts
- 1/3 cup coriander or substitute for mint and parsley mixed if you don't like coriander.
For the sauce
- 3tbsp fish sauce (nam pla)
- 1 tbsp soy
- 5 tbsp light brown sugar
- 2 tbsp rice wine vinegar
- 2 tbsp smooth peanut butter
- 1 fresh red chilli diced or splash of sriracha.
Method
- Soak the noodles in boiling water for four minutes. Blitz the sauce ingredients together.
- Meanwhile, in a hot pan add in the rapeseed oil and cook the prawns for 1-2 minutes until coloured.
- Whisk the eggs before pouring them into the pan and scrambling them.
- Add in the noodles, peppers, bok choy, crushed garlic, spring onions and half the chopped peanuts.
- Squeeze in the lime juice.
- Add in the sauce and cook for 2 minutes.
- Serve with extra coriander and a wedge of lime!
