A decadent pasta dish that calls for just four ingredients, by Massimiliano Bagaglini.
Ingredients
- 350-400g tagliolini
- 150g Parmesan cheese
- 100ml fresh cream
- 80g black truffle
Method
- To make the Parmesan sauce, pour the fresh cream in the pan and heat it up until boiling, then add the Parmesan into the cream.
- Stir it until you reach a velvety and smooth creamy sauce, then turn off the heat. Off the heat, grate half of the black truffle in the sauce and mix it.
- Cook your tagliolini and when ready, don't forget to keep a cup of the pasta cooking water. Drain the pasta and put in the pan with the Parmesan sauce.
- Mix it well, adding the pasta cooking water little by little, until you reach a nice consistency creamy pasta.
- Plate the tagliolini and grate the rest of the truffle on top of each plate! Buon appetito!
