A decadent pasta dish that calls for just four ingredients, by Massimiliano Bagaglini.

Ingredients

  • 350-400g tagliolini
  • 150g Parmesan cheese
  • 100ml fresh cream
  • 80g black truffle

Method

  1. To make the Parmesan sauce, pour the fresh cream in the pan and heat it up until boiling, then add the Parmesan into the cream.
  2. Stir it until you reach a velvety and smooth creamy sauce, then turn off the heat. Off the heat, grate half of the black truffle in the sauce and mix it.
  3. Cook your tagliolini and when ready, don't forget to keep a cup of the pasta cooking water. Drain the pasta and put in the pan with the Parmesan sauce.
  4. Mix it well, adding the pasta cooking water little by little, until you reach a nice consistency creamy pasta.
  5. Plate the tagliolini and grate the rest of the truffle on top of each plate! Buon appetito!
