Serves 2

  • 1 tbs butter
  • 1 onion, peeled and finely chopped
  • 2 cloves of garlic , peeled and sliced
  • A 2cm knob of ginger , peeled and thinly sliced
  • 1 tsp allspice
  • 100mls cider
  • 150 mls cream
  • 500g Mussels
  • 2 tbs chopped parsley


Put the butter, onion, garlic, ginger and allspice into a pot and cook gently for five minutes.

Add the cider, cream and mussels.

Cover and steam on a high heat for 2-3 minutes until the mussels open. This will all depend on the size of the mussels.

Add the parsley, stir and serve.
