- 1 tbs butter
- 1 onion, peeled and finely chopped
- 2 cloves of garlic , peeled and sliced
- A 2cm knob of ginger , peeled and thinly sliced
- 1 tsp allspice
- 100mls cider
- 150 mls cream
- 500g Mussels
- 2 tbs chopped parsley
Put the butter, onion, garlic, ginger and allspice into a pot and cook gently for five minutes.
Add the cider, cream and mussels.
Cover and steam on a high heat for 2-3 minutes until the mussels open. This will all depend on the size of the mussels.
Add the parsley, stir and serve.
