Speedy nachos with beans

Ingredients

Serves: 2

  • 1 can of beans (415g)
  • 200g nacho chips
  • 75g cheddar cheese
  • 1 fresh jalapeno, sliced
  • 1 avocado, sliced
  • 20g coriander, chopped
  • 1 lime

Method

  1. Place nacho chips on a baking tray, cover with grated cheddar cheese and cook in over for 10 minutes or until cheese is melted.
  2. Heat a tin of beans in a small pan on the hob until hot.
  3. Remove the cheesy nachos from the over, spoon over beans and garnish with slices jalapenos, sliced avocado, and chopped coriander.
  4. Serve with lime wedges.
