Kevin Dundon's French Toast: Today

Ingredients

Prep time: 5 minutes 

Cooking time: 5 minutes  

Serves: 

  • 3 eggs  
  • 400ml milk 
  • 50g caster sugar 
  • 1 tsp. vanilla extract 
  • 1 tsp ground cinnamon 
  • 4-8 slices of brioche or slicepan bread 
  • 50g butter 
  • 6 slices steaky bacon  
  • 100ml maple syrup or Honey  
  • Icing sugar to serve 

Method

  1. Preheat the oven to 100˚C.  
  2. In a bowl, whisk together the eggs, milk, sugar, vanilla extract and cinnamon powder. 
  3. Heat a non stick pan over a medium heat. Add the bacon and cook for 4-6 minutes until the bacon is fully coloured. remove from the sauté pan and set aside on a dish.  
  4. Then, in the same sauté pan, over low to medium heat, melt half of the butter. 
  5. Dip the slices in the egg mixture and coat on both sides. 
  6. Shake any excess and place in the pan. Cook for about 30-45 seconds on each side until browned. Remove onto a baking tray and keep warm in the oven. Continue with the remaining slices.  
  7. Serve immediately while warm with bacon and a drizzle of maple syrup and dusting of icing sugar.
