- 3 eggs
- 400ml milk
- 50g caster sugar
- 1 tsp. vanilla extract
- 1 tsp ground cinnamon
- 4-8 slices of brioche or slicepan bread
- 50g butter
- 6 slices steaky bacon
- 100ml maple syrup or Honey
- Icing sugar to serve
Method
- Preheat the oven to 100˚C.
- In a bowl, whisk together the eggs, milk, sugar, vanilla extract and cinnamon powder.
- Heat a non stick pan over a medium heat. Add the bacon and cook for 4-6 minutes until the bacon is fully coloured. remove from the sauté pan and set aside on a dish.
- Then, in the same sauté pan, over low to medium heat, melt half of the butter.
- Dip the slices in the egg mixture and coat on both sides.
- Shake any excess and place in the pan. Cook for about 30-45 seconds on each side until browned. Remove onto a baking tray and keep warm in the oven. Continue with the remaining slices.
- Serve immediately while warm with bacon and a drizzle of maple syrup and dusting of icing sugar.
