A hearty and comforting pie that will wow the whole family.
Ingredients
Serves 4-6
- 2 tbsp. oil
- 50g butter
- 2 large pork chops, diced
- 200g bacon, chopped
- 2 onions, chopped
- 2-3 garlic cloves, chopped
- 3-4 carrots, chopped
- 40g plain flour
- 150ml chicken stock
- 250ml porter such as Guinness
- 500g leftover mash potatoes
Method
- Preheat the oven to 200˚C.
- Place the chicken stock in a saucepan and bring to the boil.
- In a saucepan, over medium to high heat, place the pork pieces and bacon into the pan and cook for 3-5 minutes until caramelised on all sides.
- Add the onions, garlic, carrots, and continue to cook for a further 2-3 minutes.
- Season with salt and pepper, and sprinkle in the flour. Cook the flour for a minute stirring to coat the vegetables.
- Next pour in the Guinness and stock and stir to combine all the ingredients.
- Transfer all the mixture into a ceramic dish and pipe the mash potato over. Add a few knobs of butter if desired and Place in the oven for 20-30 minutes until piping hot and golden brown.
- Serve with some dressed salad greens.
