Ingredients

Serves 4-6 

  • 250g pudding rice 
  • 1200ml milk 
  • 70g caster sugar  
  • 1 tsp. vanilla extract  
  • A pinch of cinnamon 
  • 4 tbsp. brown sugar 
  • Whipped cream to serve 

Method

  1. Preheat the oven to 150˚C.  
  2. Place the pudding rice in a ceramic dish. 
  3. In a saucepan, place the milk, caster sugar and vanilla extract. Bring to the boil.  
  4. Pour the boiling liquid over the rice and cover the ceramic dish with tin foil.  
  5. Place in the oven for 100-120 minutes. Remove from the oven after 45 minutes and gently stir to ensure it doesn't stick to the bottom of the dish. 
  6. Remove from the oven and set aside to cool for a while.  
  7. Once cooled enough to handle, sprinkle with brown sugar and using a kitchen blow torch caramelised until coloured. 
  8. Serve with some whipped cream.
