A sweet Autumnal treat.
Ingredients
Serves: 4
- 2 ripe pears, peeled and quartered
- 4 ripe plums, halved and stone removed
- 4 ripe figs, halved
- Some blackberries
- 200mls cider
- 100g golden brown sugar
- A sprig of thyme
Cheesecake cream
- 150 mls cream
- 150 g light cream cheese
- 2 tsp icing sugar
- A little Vanilla extract
- Set the oven to 185deg
- Lay all the fruit on a small roasting tray with the thyme, drizzle over the cider, and scatter over the sugar.
Crumble topping
- 100g plain flour
- 100g demerara sugar
- 50g porridge oats
- 75g butter
Method
- Bake in the oven for 20 minutes or so until the fruit is soft .
- Whip the cream and fold in the cream cheese and icing sugar then chill.
Crumble topping:
- Bring the butter up to room temperature, add all the ingredients and knead together with your fingertips until mixed.
- Cook in the oven for 12 minutes at 165 deg with the fan off then leave to rest.
