Ingredients

Serves 4
Prep time: 5 mins
Cooking time: 2 to 6 hours

  • 4 boneless, skinless chicken legs or 8 chicken thighs, diced
  • 2 x 400g tins of chopped tomatoes
  • 1 fresh green chilli, de-seeded and chopped
  • 2 tbsp taco seasoning
  • 1 tbsp ground coriander
  • Salt and pepper

To serve

  • 4–8 tortilla wraps
  • ½ head of iceberg lettuce, shredded
  • 50ml sour cream

Method

  1. Put the chicken, tomatoes, chilli, spices and some salt and pepper in your slow cooker and stir to coat. Cover with the lid and cook on high for 2 hours or cook on low for 5 to 6 hours.
  2. Remove the chicken and shred with two forks, then put it back into the slow cooker and mix together. Check the seasoning. 
  3. Serve the chicken in tortilla wraps with shredded iceberg lettuce and a dollop of sour cream.
