The perfect slow cooker dinner from Kevin McGahern.
Ingredients
Serves 4
Prep time: 5 mins
Cooking time: 2 to 6 hours
- 4 boneless, skinless chicken legs or 8 chicken thighs, diced
- 2 x 400g tins of chopped tomatoes
- 1 fresh green chilli, de-seeded and chopped
- 2 tbsp taco seasoning
- 1 tbsp ground coriander
- Salt and pepper
To serve
- 4–8 tortilla wraps
- ½ head of iceberg lettuce, shredded
- 50ml sour cream
Method
- Put the chicken, tomatoes, chilli, spices and some salt and pepper in your slow cooker and stir to coat. Cover with the lid and cook on high for 2 hours or cook on low for 5 to 6 hours.
- Remove the chicken and shred with two forks, then put it back into the slow cooker and mix together. Check the seasoning.
- Serve the chicken in tortilla wraps with shredded iceberg lettuce and a dollop of sour cream.
