An indulgent dessert to add some kick to your week! Makes 6 individual martini glasses (Double the recipe to make a single large dish).

Ingredients

For the Espresso Martini Syrup

  • 
250ml Freshly Brewed Coffee

  • 80ml Tia Maria or Coffee Liqueur  
  • 80ml Vodka

  • 40g Caster Sugar

For the Mascarpone Layers 

  • 300g Lady Fingers

  • 500g Mascarpone

  • 2 Eggs, Yolks only
  • 
60g Caster Sugar

  • 2tsp Vanilla Extract

  • 400ml Cream
  • 
Zest of 2 Oranges

To Garnish

  • Dark Chocolate, for shaving

  • Cocoa Powder, for dusting


Method

  1. Make the syrup by placing all of the syrup ingredients in a small saucepan over a medium heat and bring to a simmer, whisking gently until the sugar has dissolved. Remove from the heat and set aside.
  2. Make the Mascarpone mix by beating the mascarpone in a mixing bowl with the orange zest and vanilla extract until soft and well combined.
  3. Put the egg yolks in a separate bowl with the caster sugar and whisk for 2-3 minutes until light and airy. Set aside.
  4. Put the cream into a separate mixing bowl and whisk until soft peaks form.
  5. Fold the mascarpone mix into the egg mix, followed by the softly whipped cream. Mix gently to ensure fully combined.  
  6. Assemble the Espresso Martini Tiramisus by soaking the lady fingers in the cooled syrup for a few seconds and place a few in the base of each glass. Spoon some of the mascarpone mix on top, followed by another layer of soaked sponge fingers. Finish with the remaining mascarpone mix.
  7. Shave a few curls of chocolate on top of each glass, followed by a light dusting of cocoa powder.
  8. Chill in the fridge before ready to serve.
