An indulgent dessert to add some kick to your week! Makes 6 individual martini glasses (Double the recipe to make a single large dish).
Ingredients
For the Espresso Martini Syrup
- 250ml Freshly Brewed Coffee
- 80ml Tia Maria or Coffee Liqueur
- 80ml Vodka
- 40g Caster Sugar
For the Mascarpone Layers
- 300g Lady Fingers
- 500g Mascarpone
- 2 Eggs, Yolks only
- 60g Caster Sugar
- 2tsp Vanilla Extract
- 400ml Cream
- Zest of 2 Oranges
To Garnish
- Dark Chocolate, for shaving
- Cocoa Powder, for dusting
Method
- Make the syrup by placing all of the syrup ingredients in a small saucepan over a medium heat and bring to a simmer, whisking gently until the sugar has dissolved. Remove from the heat and set aside.
- Make the Mascarpone mix by beating the mascarpone in a mixing bowl with the orange zest and vanilla extract until soft and well combined.
- Put the egg yolks in a separate bowl with the caster sugar and whisk for 2-3 minutes until light and airy. Set aside.
- Put the cream into a separate mixing bowl and whisk until soft peaks form.
- Fold the mascarpone mix into the egg mix, followed by the softly whipped cream. Mix gently to ensure fully combined.
- Assemble the Espresso Martini Tiramisus by soaking the lady fingers in the cooled syrup for a few seconds and place a few in the base of each glass. Spoon some of the mascarpone mix on top, followed by another layer of soaked sponge fingers. Finish with the remaining mascarpone mix.
- Shave a few curls of chocolate on top of each glass, followed by a light dusting of cocoa powder.
- Chill in the fridge before ready to serve.
