Heritage zesty potato salad, smoked salmon, fried eggs & sour cream.
Ingredients
Serves: 2
- 6 cooked potatoes (sliced 1 cm thick )
- 1 tbsp butter
- 1 tsp rapeseed oil
- 1 clove garlic
- Juice & Zest 1 lemon
- 1 tsp chopped fresh or dried tarragon
- 1 Thai red chilli (small dice)
- 4 scallions
- 1 tsp smoked paprika
- 200g Irish smoked salmon
- 2 tbsp sour cream
- 1 tsp dill or fennel
- 2 free-range hens or duck eggs
- 2 tbsp of parmesan or hard strong cheese for grating
Method
- Fry the potatoes in the oil, butter & paprika until golden brown
- Add the garlic, ½ the chilli, lemon zest & tarragon & fry for 1 minute
- In a bowl mix the sour cream, lemon juice, dill & remainder of the chilli
- Fry the 2 eggs sunny side up
- Arrange the smoked salmon on 2 plates, squeeze a little lemon over the top & cracked black pepper over it
- Place ½ the potatoes on each plate of salmon
- Serve a fried egg on top
- A dollop of sour cream & some shaved cheese on top
