Heritage zesty potato salad, smoked salmon, fried eggs & sour cream.

Ingredients

Serves: 

  • 6 cooked potatoes (sliced 1 cm thick )
  • 1 tbsp butter 
  • 1 tsp rapeseed oil 
  • 1 clove garlic
  • Juice & Zest 1 lemon 
  • 1 tsp chopped fresh or dried tarragon 
  •  1 Thai red chilli (small dice) 
  • 4 scallions 
  • 1 tsp smoked paprika 
  • 200g Irish smoked salmon
  • 2 tbsp sour cream 
  • 1 tsp dill or fennel 
  • 2 free-range hens or duck eggs 
  • 2 tbsp of parmesan or hard strong cheese for grating

Method

  1. Fry the potatoes in the oil, butter & paprika until golden brown
  2. Add the garlic, ½ the chilli, lemon zest & tarragon & fry for 1 minute 
  3. In a bowl mix the sour cream, lemon juice, dill & remainder of the chilli 
  4. Fry the 2 eggs sunny side up
  5. Arrange the smoked salmon on 2 plates, squeeze a little lemon over the top & cracked black pepper over it 
  6. Place ½ the potatoes on each plate of salmon
  7. Serve a fried egg on top 
  8. A dollop of sour cream & some shaved cheese on top
