Ingredients

  • 100g dried penne pasta
  • 50ml olive oil
  • 100g pancetta 
  • 50g grated Parmesan 
  • 3egg yolk
  • Black pepper to grind

Method

  1. Cook pasta in salted boiling water according to producers instructions.
  2. Heat the olive oil in a frying pan and add diced Guanciale or pancetta if using, fry until crispy, this should take 3 or 4 minutes.
  3. As your meat is getting crispy add three egg yolks and the grated Parmesan to a mixing bowl, along with 4 tablespoons of the pasta water, mix this well. 
  4. Now strain your pasta reserving s little of the cooking water.
  5. Add the pasta to the pan with the meat in and continue to cook gently allowing the pasta to absorb some of the fat.
  6.  Remove the pan from the heat allow cool a little, add the egg parmesan mix and stir well tossing the pan if you can if it’s very thick, add a little of the reserved water. 
  7. Serve on a warm plate and finish with a little cracked black pepper.
