The ultimate comfort food.
Ingredients
- 100g dried penne pasta
- 50ml olive oil
- 100g pancetta
- 50g grated Parmesan
- 3egg yolk
- Black pepper to grind
Method
- Cook pasta in salted boiling water according to producers instructions.
- Heat the olive oil in a frying pan and add diced Guanciale or pancetta if using, fry until crispy, this should take 3 or 4 minutes.
- As your meat is getting crispy add three egg yolks and the grated Parmesan to a mixing bowl, along with 4 tablespoons of the pasta water, mix this well.
- Now strain your pasta reserving s little of the cooking water.
- Add the pasta to the pan with the meat in and continue to cook gently allowing the pasta to absorb some of the fat.
- Remove the pan from the heat allow cool a little, add the egg parmesan mix and stir well tossing the pan if you can if it’s very thick, add a little of the reserved water.
- Serve on a warm plate and finish with a little cracked black pepper.
