Use cherry tomatoes in winter for better flavour.
Ingredients
Serves 4-6
- 4 very ripe tomatoes, or 16-20 cherry tomatoes, chopped
- 1 tablespoon onion, chopped
- 1 clove garlic, crushed
- 1/2-1 chilli, deseeded and finely chopped
- 1-2 tablespoons chopped fresh coriander
- A squeeze of fresh lime juice
- Salt, freshly ground pepper and sugar
Method
- Mix all the ingredients together.
- Season with salt, freshly ground pepper and a pinch of sugar if necessary.
- Taste and correct the seasoning.
