Use cherry tomatoes in winter for better flavour.


Serves 4-6

  • 4 very ripe tomatoes, or 16-20 cherry tomatoes, chopped
  • 1 tablespoon onion, chopped
  • 1 clove garlic, crushed
  • 1/2-1 chilli, deseeded and finely chopped
  • 1-2 tablespoons chopped fresh coriander
  • A squeeze of fresh lime juice
  • Salt, freshly ground pepper and sugar


  1. Mix all the ingredients together.
  2. Season with salt, freshly ground pepper and a pinch of sugar if necessary.
  3. Taste and correct the seasoning.
