Kevin Dundon's One Dish Meatball Supper is perfect for a day like today: hearty, flavourful and easy to pull together.

Ingredients

Serves: 4-6

  • 750 g minced beef
  • 2 onions, finely chopped
  • 4 clove of garlic, chopped
  • 50 g breadcrumbs
  • 1 egg
  • 1 teaspoon of dried mixed herbs
  • 2 carrots, grated
  • 400 ml or 1 tin chopped tomatoes
  • 200 ml beef stock
  • 400 g dry pasta
  • 2 grated cheese (Parmesan and grated cheddar)
  • 2 tbsp. Pesto
  • salt and pepper

Method

  1. In a bowl, combine the beef mince, half onion, 1 chopped garlic clove, breadcrumb, egg and mix herbs together. Season well then Shape the mixture into 4 cm diameter meatballs.
  2. Heat an oven safe casserole dish, over high heat. Drizzle some olive oil and add the meatballs. Colour on all sides for 4-5 minutes. Remove the meatballs from the pan, and remove excess of fat from the casserole dish.
  3. Place the casserole dish over medium heat again and add the rest of the onion, garlic, carrot. Sauté for 2 minutes then place the cooked meatballs.
  4. Pour the tin of chopped tomatoes and stock to just cover the meatballs. Season with salt and pepper and bring to simmer, covered with a lid for 15 minutes. keep aside warm until needed.
  5. In the meantime, bring a large saucepan of salted water to the boil. Add the pasta and cook as per pack instruction. When cooked remove from the heat and drain. Toss the pasta in with the warmed meatball and place in a ceramic dish.
  6. Sprinkle the cheese and spoon the pesto. Place in the oven for 10 minutes to melt and brown the cheese.
  7. Serve immediately.
