This warming casserole, with a rich tomato base and juicy sausages, is perfect for dinner on a cold night and best enjoyed with a loaf of crusty bread.

Ingredients

  • 1 drizzle of olive oil 
  • 5 shallots (peeled and chopped) 
  • 4 cloves of garlic (chopped)
  • 2 bay leaves 
  • 8 free-range large sausages
  • 2 sprigs of rosemary
  • 2 tbsp smoked paprika 
  • 1 glass of red wine
  • 1 tin of cannellini beans 
  • 2 red chillis 
  • 2 tins of tomato passata
  • 2 handfuls of breadcrumbs

Method

  1. Heat a heavy-bottomed pan, add oil, shallots, garlic and bay leaves. Cook for 1-2 mins. 
  2. Add the sausages and rosemary, and brown them off. 
  3. Add the red wine and simmer to reduce the liquid by half. 
  4. Add the tomato passata.
  5. Add the cannellini beans. 
  6. Add the chillis and smoked paprika. 
  7. Simmer for 10-15 mins, then add to an over-proof dish. Sprinkle the breadcrumbs on top.
  8. Bake for 10-12 mins until golden brown.
  9. Enjoy with some crusty bread.
