Chopped Chicken Power Salad from Operation Transformation.

Ingredients

Serves: 1      

  • 50g spinach
  • ¼ small cauliflower, separated into florets
  • ½ medium carrot, peeled and chopped
  • 1 clove garlic
  • 1 small bunch fresh coriander
  • 1 tbsp olive oil
  • 100g cooked chicken
  • ½  tbsp raisins
  • 1 tsp pumpkin seeds


 

Method

  1. Place cauliflower, carrots, coriander and garlic in a food processor and pulse until finely chopped
  2. Add oil and raisins and pumpkin seeds
  3. Combine with spinach and chicken and season with salt and pepper if desired
