Chopped Chicken Power Salad from Operation Transformation.
Ingredients

- 50g spinach
- ¼ small cauliflower, separated into florets
- ½ medium carrot, peeled and chopped
- 1 clove garlic
- 1 small bunch fresh coriander
- 1 tbsp olive oil
- 100g cooked chicken
- ½ tbsp raisins
- 1 tsp pumpkin seeds
Method
- Place cauliflower, carrots, coriander and garlic in a food processor and pulse until finely chopped
- Add oil and raisins and pumpkin seeds
- Combine with spinach and chicken and season with salt and pepper if desired
