A tasty breakfast burrito from Operation Transformation.


Serves: 1

  • ½ red onion, chopped
  • ½ bunch coriander, chopped
  • 1 egg
  • 1 tbsp low-fat milk
  • 100g black beans, drained
  • 30g cheese, grated
  • 1 wholemeal wrap
  • 1tsp olive oil
  • 1 tomato, diced


  1. Place oil in a pan over medium-high heat
  2. Add onion and cook until softened
  3. In a separate bowl beat egg and milk together 
  4. Now add the egg to the pan along with tomato, cheese, and black beans
  5. Cook, stirring regularly until the eggs are cooked through
  6. Place scrambled egg mixture in wrap and serve
  7. Garnish with coriander if desired
