A tasty breakfast burrito from Operation Transformation.
Ingredients
Serves: 1
- ½ red onion, chopped
- ½ bunch coriander, chopped
- 1 egg
- 1 tbsp low-fat milk
- 100g black beans, drained
- 30g cheese, grated
- 1 wholemeal wrap
- 1tsp olive oil
- 1 tomato, diced
Method
- Place oil in a pan over medium-high heat
- Add onion and cook until softened
- In a separate bowl beat egg and milk together
- Now add the egg to the pan along with tomato, cheese, and black beans
- Cook, stirring regularly until the eggs are cooked through
- Place scrambled egg mixture in wrap and serve
- Garnish with coriander if desired
