This Operation Transformation recipe is a special treat for the weekend, not to be eaten as an everyday meal.


Serves: 1

  • 50g cooked potato, peeled & chopped (left overs are best)
  • 20g chorizo, thinly sliced
  • 1 egg
  • 1 tbsp low fat milk
  • 1 tomato, diced
  • 30g cheese, grated
  • 1 tsp olive oil


  1. Place oil in a pan over medium heat.  Add chorizo and cook until browned
  2. In a separate bowl beat eggs and milk together
  3. Now add the eggs to the pan along with tomato, cheese and cooked potato
  4. Cook, stirring regularly until the eggs are cooked through
