This Operation Transformation recipe is a special treat for the weekend, not to be eaten as an everyday meal.
Ingredients

- 50g cooked potato, peeled & chopped (left overs are best)
- 20g chorizo, thinly sliced
- 1 egg
- 1 tbsp low fat milk
- 1 tomato, diced
- 30g cheese, grated
- 1 tsp olive oil
Method
- Place oil in a pan over medium heat. Add chorizo and cook until browned
- In a separate bowl beat eggs and milk together
- Now add the eggs to the pan along with tomato, cheese and cooked potato
- Cook, stirring regularly until the eggs are cooked through
