Craving tacos but trying to eat healthily? Try out these prawn and black bean tacos from Operation Transformation.
Ingredients
Serves: 2
- 1 tsp olive oil
- 160g prawns (fresh or defrosted)
- ¾ tsp ground cumin
- 1 can black beans, drained, retaining 2 tbsp of liquid
- ¼ tsp chilli powder
- ¼ tsp cayenne pepper
- 4 corn tortillas or kid size wraps (40g per wrap)
- 80g wholegrain rice
- ½ avocado
- 1 red onion, diced
- 4 medium tomatoes, diced
- 1 small bunch of coriander, chopped
- Juice of ½ lime
For the side salad:
- 50g spinach
- 1 small can sweetcorn
- ½ cucumber
- 8 cherry tomatoes
Method
- Cook rice according to packet instructions
- In a bowl combine the chopped tomatoes, onions and coriander
- Drizzle lime juice on top and set aside
- Heat the oil in a large pan over medium heat
- Add the prawns, cumin, chilli powder and cayenne pepper and cook for 5- 7 minutes or until cooked through
- Remove prawns from pan and set aside
- Now add the beans, 2 tablespoons of liquid and remaining cumin to pan
- Cook for 3 - 4 minutes and mash beans well with a fork
- Heat the tortillas in the microwave for 5 - 10 seconds
- Divide bean mixture, rice, prawns and avocado evenly among the 4 tortillas
- Top with the diced onion, tomato, coriander mixture and serve with side salad
