Ingredients
Serves: 2
- 120g basmati OR wholegrain rice
- 1 red pepper, sliced in strips
- 1 yellow pepper, sliced in strips
- 1 green pepper, sliced in strips
- 1 onion, sliced into rings
- 2 tbsp olive oil
- 300g turkey breast, cut into strips
- 1 ½ tsp fajita seasoning
- Juice of 1/4 lime
- Small bunch fresh coriander
- ¼ avocado, sliced
- 1tbsp sour cream
- 30ml cold water
Method
- Pre-heat oven to 180C/ 160C Fan/ 350F/gas 4
- Cook rice according to packet instructions
- Place 1/3 of the sliced pepper, 2 rings of onion, coriander and water in a blender, blitz together and set aside
- Brush remaining peppers and onion with 1 tablespoon of olive oil and place on a baking tray
- Place in the oven and bake until tender (approx. 20 mins)
- Combine turkey with oil and fajita seasoning
- Heat a dry pan or wok to medium heat and stir-fry turkey until cooked through
- Combine cooked rice with pepper/coriander puree and divide into 2 bowls
- Top with turkey, baked vegetables, avocado and sour cream
- Add lime juice and serve
