Serves: 2 

  • 120g wholemeal penne pasta (or any shape) 
  • 2 large roasted red peppers (from a jar), chopped 
  • 6 sundried tomatoes, drained and chopped 
  • 1 tsp rapeseed oil 
  • 1 ½ tbsp tomato purée 
  • 1 clove garlic, crushed 
  • 1 sprig fresh rosemary 
  • 2 tbsp cooking cream 
  • 2 tbsp grated parmesan 
  • 300g broccoli, cut into small pieces 


  1. Cook the pasta according to packet instructions 
  2. Add oil to a deep pan on medium heat 
  3. Add broccoli and cook for 4 minutes 
  4. Add garlic and rosemary sprig and stir-fry for one 1 minute 
  5. Add peppers, sundried tomatoes, and tomato puree and cook for 2 minutes, stirring all the time 
  6. Stir in cooking cream and parmesan 
  7. Remove from heat 
  8. Combine sauce with drained pasta and serve
