Ingredients
Serves: 2
- 120g wholemeal penne pasta (or any shape)
- 2 large roasted red peppers (from a jar), chopped
- 6 sundried tomatoes, drained and chopped
- 1 tsp rapeseed oil
- 1 ½ tbsp tomato purée
- 1 clove garlic, crushed
- 1 sprig fresh rosemary
- 2 tbsp cooking cream
- 2 tbsp grated parmesan
- 300g broccoli, cut into small pieces
Method
- Cook the pasta according to packet instructions
- Add oil to a deep pan on medium heat
- Add broccoli and cook for 4 minutes
- Add garlic and rosemary sprig and stir-fry for one 1 minute
- Add peppers, sundried tomatoes, and tomato puree and cook for 2 minutes, stirring all the time
- Stir in cooking cream and parmesan
- Remove from heat
- Combine sauce with drained pasta and serve
