Ingredients

Total Cook Time: 30 Mins
Serves 4

  • 750g baby potatoes, 
  • 2 tbsp goose fat
  • 1 head of garlic, cloves separated but skins still on
  • 2 sprigs of rosemary

Method

  1. Place in a pot of cold water and cook for 8-10 minutes or until tender.
  2. Cut the potatoes into two or three pieces depending on their size. 
  3. Heat the goose fat in a heavy frying pan over a medium-high heat then add the potatoes in a single layer,   add the garlic and rosemary, season and leave to cook undisturbed until golden then turn and saute on the other side. 
  4. Drain on kitchen roll, serve immediately.
