Ingredients

Serves 4
- 750g baby potatoes,
- 2 tbsp goose fat
- 1 head of garlic, cloves separated but skins still on
- 2 sprigs of rosemary
Method
- Place in a pot of cold water and cook for 8-10 minutes or until tender.
- Cut the potatoes into two or three pieces depending on their size.
- Heat the goose fat in a heavy frying pan over a medium-high heat then add the potatoes in a single layer, add the garlic and rosemary, season and leave to cook undisturbed until golden then turn and saute on the other side.
- Drain on kitchen roll, serve immediately.
