Neven's Christmas Menu for 2017 includes a variety of Christmas cocktails.
Ingredients
Santa's Little Helper
Serves 2
- 8 tbsp cream
- 5 tbsp Irish cream liqueur
- 5 tbsp vodka
- 2 tbsp amaretto
- about 50g (2oz) crushed ice
- ground cinnamon, to dust
- freshly grated nutmeg, to dust
Festive Pomegranate Mojito
Serves 6-8
- 300ml pomegranate juice
- juice of 4 limes
- 100g (4oz) golden caster sugar
- 15g fresh mint, leaves stripped off
- 250ml (9fl oz) white rum
- 1 litre soda water
- 175g (6oz) ice cubes
- pomegranate seeds, to decorate
- lime slices, to decorate
Warm White Wine with Honey and Herbs
Serves 6
- 1 bottle of dry white wine (I like to use a Sauvignon Blanc)
- finely grated rind and juice of 1 lemon
- 1 small bunch of fresh thyme
- 1 small bunch of fresh rosemary
- 2 tbsp honey
Method
Santa's Little Helper
- Put the cream, cream liqeur, vodka and amaretto in a cocktail shaker.
- Add a good handful of crushed ice and shake until thoroughly combined.
- Strain into Martini glasses and give each one a light dusting of cinnamon and nutmeg to serve.
Festive Pomegranate Mojito
- Put the pomegranate juice, lime juice, sugar and most of the mint leaves in a large jug.
- Crush the ingredients together with the end of a rolling pin to release the flavour of the mint and dissolve the sugar.
- Add the rum and mix well, then top up with the soda water and plenty of ice, stirring until well combined.
- Pour into tall cocktail glasses and decorate with the rest of the mint leaves, the pomegranate seeds, and the lime slices to serve.
Warm White Wine with Honey and Herbs
- Put all the ingredients in a heavy-based pan. Heat gently until just simmering, and then pour into warmed glasses to serve.
