Ingredients
Serves: 2
- 2 salmon fillets (120g each)
- 1 clove garlic, minced
- 100g kale, roughly chopped
- 3 carrots, peeled and chopped
- 100g canned lentils, drained
- 3 tsp olive oil
- 1 tsp red wine vinegar
- 100ml vegetable stock
Method
- Add 1 ½ tsp oil to a pot over medium heat
- Add garlic and cook for 1 minute, stirring to prevent burning
- Now add kale, carrots, vegetable stock and red wine vinegar
- Cook until tender for about 12 - 15 minutes, stirring often
- Add lentils for last 3 minutes to heat through
- In a skillet/pan place remaining oil on medium to high heat, season salmon with a little salt and pepper and fry for 3 - 4 minutes per side until cooked through
- Serve salmon over lentil and vegetable mixture
