Ingredients

Portion Calories: 420
- 100g wholemeal spaghetti
- 2 chicken fillets, cut into 2cm dice
- 1 jar / can crushed tomatoes (350g)
- 1 bunch basil, chopped
- 2 tbsp pitted olives
- 1 tsp capers
- 4 sundried tomatoes, drained and chopped
- 1 tbsp grated parmesan
- 1 Aubergine, chopped

- 1 tsp olive oil
Method
- Cook pasta according to packet instructions.
- Add oil to pan over medium heat, add chicken and cook until lightly browned.
- Add the aubergine and cook it with the chicken for 2-3 minutes.
- Add in crushed tomatoes, olives, capers, and sundried tomatoes.
- Bring to a simmer, stirring regularly until chicken is cooked through and vegetables tender.
- Add basil and stir through.
- Serve with pasta and top with parmesan cheese.
