Chicken Puttanesca: Operation Transformation

Ingredients

Serves:

  • 100g wholemeal spaghetti
  • 2 chicken fillets, cut into 2cm dice
  • 1 jar / can crushed tomatoes (350g)
  • 1 bunch basil, chopped
  • 2 tbsp pitted olives
  • 1 tsp capers
  • 4 sundried tomatoes, drained and chopped
  • 1 tbsp grated parmesan
  • 1 Aubergine, chopped

Food Staples

  • 1 tsp olive oil

Method

  1. Cook pasta according to packet instructions.
  2. Add oil to pan over medium heat, add chicken and cook until lightly browned.
  3. Add the aubergine and cook it with the chicken for 2-3 minutes.
  4. Add in crushed tomatoes, olives, capers, and sundried tomatoes.
  5. Bring to a simmer, stirring regularly until chicken is cooked through and vegetables tender.
  6. Add basil and stir through.
  7. Serve with pasta and top with parmesan cheese.
