The flavour of lime is terrific with the chocolate flavoured biscuit and helps to cut through the sweetness to achieve a lovely balance.

Makes 36 biscuits

  • 140g butter at room temperature 
  • 1 tablespoon sunflower oil 
  • 125g caster sugar 
  • 1 beaten egg 
  • 1 teaspoon vanilla extract 
  • 225g plain flour 
  • 35g unsweetened cocoa powder 
  • 1 teaspoon baking powder 

 
Buttercream filling: 

  • 100g butter at room temperature 
  • 45g icing sugar 
  • Zest and juice of 1 lime 
  •  
  • 1 lime for final grating of zest 

Method

  1. Pre-heat the oven to 360f / 180c /gas 4
  2. The biscuit dough can be made by hand or in a food mixer using the paddle attachment. Place the butter, oil and caster sugar in a large bowl. By hand with a wooden spoon, or with the aid of a food mixer, cream together until light and fluffy in consistency and pale in colour.
  3. Add the egg and vanilla and beat again until well blended and smooth.
  4. Sieve the flour, cocoa and baking powder onto the mixture in the bowl and blend in until the mixture comes together and no longer looks streaky. Do not over mix. Form the mixture into a round flattened to c 3 cm, wrap in parchment paper and chill the mixture for at least 30 minutes.
  5. Roll out ½ of the mixture at a time to about 5mm thick, using a little flour to prevent it from sticking. Alternatively, roll between sheets of parchment paper.
  6. Cut out the biscuits with the cutter of choice and using a palate knife, place on a baking sheet lined with parchment paper. Leave a little space between the biscuits as they swell slightly when cooking.
  7. Cook in the pre-heated oven for approx 8 minutes. They will rise slightly and feel gently set to the touch.
  8. The biscuits crisp up as they cool. Place the baking sheet on a wire rack and allow the biscuits to cool, still on the parchment paper.
  9. To make the buttercream, place the butter and icing sugar in a mixing bowl and beat with a wooden spoon until light and fluffy. Add the lime zest and juice and mix well. 
  10. Sandwich the biscuits together with the buttercream and then grate the remaining lime finely all over the tops of the biscuits.
