This is a simple and effective little salad that is suitable served as a first course or as a cheese course.
Serves: 4
- 4 ripe figs
- 4 slices of soft goats cheese such as Ardsallagh or Triskell
- 16 - 20 rocket leaves
- 16 - 20 small mint leaves
Dressing
- 3 tablespoons (4 American tablespoons) olive oil
- 1 tablespoon (1 American tablespoon + 1 teaspoon) lemon juice
- 1 teaspoon honey
- salt and pepper
Method
- Divide the rocket leaves between 4 plates or 1 large serving dish.
- Cut the figs in half and then into quarters down through the stalk, all the time keeping it hinged at the base so as to maintain a good shape. Place the cut figs in the centre of the plates or on the leaves on the large serving dish.
- Slice the goats cheese and place a slice in the centre of the fig "flower".
- Mix all of the dressing ingredients well and season to taste with salt and pepper.
- Drizzle the dressing over the figs, goats cheese and the leaves and finally scatter the mint leaves over the plates.
