JP McMahon made his mouth-watering pork chops with black pudding and potatoes on Today with Marua and Dáithí.

Ingredients

  • 4 pork chops on the bone
  • 1 log black pudding 
  • 250ml cream sherry 
  • 8 large potatoes, peeled
  • 450g butter 
  • Rapeseed oil 
  • Fresh thyme 
  • Sea salt 

Method

  1. Place the pork chops on an oven tray. Season with sea salt, thyme and oil. Place in an 180c oven and roast for 15 minutes.
  2. Dice the black pudding and fry in a little oil. Pour in the sherry and burn off the alcohol on a medium heat for 5 minutes.
  3. For the mash: simmer the potatoes until soft. Strain and return to the pot. Season with sea salt and mash with half as much butter to potato. 
  4. To serve: spoon some mash into centre of the plate. Lay the chop on the mash and pour the sauce over the chop.
