JP McMahon made his mouth-watering pork chops with black pudding and potatoes on Today with Marua and Dáithí.
Ingredients
- 4 pork chops on the bone
- 1 log black pudding
- 250ml cream sherry
- 8 large potatoes, peeled
- 450g butter
- Rapeseed oil
- Fresh thyme
- Sea salt
Method
- Place the pork chops on an oven tray. Season with sea salt, thyme and oil. Place in an 180c oven and roast for 15 minutes.
- Dice the black pudding and fry in a little oil. Pour in the sherry and burn off the alcohol on a medium heat for 5 minutes.
- For the mash: simmer the potatoes until soft. Strain and return to the pot. Season with sea salt and mash with half as much butter to potato.
- To serve: spoon some mash into centre of the plate. Lay the chop on the mash and pour the sauce over the chop.
