Ingredients
Serves: 2
- 200g cooked pork
- 1 head bok choy, cut into sections
- 2 scallions, chopped
- 100g wholewheat spaghetti
Food Staples:
- 2 tablespoons reduced sodium soy sauce
- 2 tablespoons olive oil
- 1 teaspoon minced ginger
- 1 teaspoon Chinese five spice
Method
- Add the wholewheat noodles to a pot of boiling water and simmer until cooked for approximately 10 minutes
- In a bowl combine the soy sauce, minced ginger and five spice to make the marinade
- Add the cooked pork to the bowl and coat with the marinade
- Add olive oil to a pan and add chopped scallions and bok choy. Cook until tender for approximately 3- 5 minutes
- Add the pork mixture to the pan and cook for 5 - 10 minutes over medium heat
- Serve the pork mixture with the noodles
