This is a delicious and very simple fish pie. Comfort food at its finest!

Ingredients

  • 800g fish, I use a mixture of white, smoked and salmon
  • 200g spinach

For White Wine and Dill Sauce:

  • 100ml white wine
  • 400ml milk
  • 50g butter
  • 50g plain flour
  • 1 tablespoon of chopped dill optional
  • Season with salt and pepper

For the Mashed Potatoes:

  • 1kg potatoes, peeled, 
  • 100mls milk
  • 50g butter
  • salt and freshly ground black pepper
  • Season with salt and pepper

Method

This is a delicious and very simple fish pie. Comfort food at its finest!

  1. Pre heat the oven to 170C

For Mashed Potato:

  1. Cook the potatoes in a covered pan of boiling salted water for 15-20 minutes until tender.
  2. Drain the potatoes, add in the milk and butter, mash until smooth, Season to taste with salt and pepper.

For White Wine and Dill Sauce:

  1. Melt the butter in a saucepan. Stir in the flour and cook for 1-2 minutes. Take the pan off the heat and gradually stir in the white wine followed by the milk to get a smooth sauce.
  2. Return to the heat and, stirring all the time, bring to the boil. Simmer gently for 8-10 minutes and season with salt and white pepper. Stir in the dill.
  3. Wash the spinach and pop into a saucepan over a low heat until the spinach wilts, then put the spinach in a sieve and press to remove any excess water.
  4. Place the spinach in the bottom of a baking dish. Put the diced fish on top, pour white wine and dill sauce over the fish, then spread the mashed potato on top.
  5. Bake in a pre-heated oven for 40 minutes until cooked through.
