This is a delicious and very simple fish pie. Comfort food at its finest!
Ingredients
- 800g fish, I use a mixture of white, smoked and salmon
- 200g spinach
For White Wine and Dill Sauce:
- 100ml white wine
- 400ml milk
- 50g butter
- 50g plain flour
- 1 tablespoon of chopped dill optional
- Season with salt and pepper
For the Mashed Potatoes:
- 1kg potatoes, peeled,
- 100mls milk
- 50g butter
- salt and freshly ground black pepper
- Season with salt and pepper
Method
This is a delicious and very simple fish pie. Comfort food at its finest!
- Pre heat the oven to 170C
For Mashed Potato:
- Cook the potatoes in a covered pan of boiling salted water for 15-20 minutes until tender.
- Drain the potatoes, add in the milk and butter, mash until smooth, Season to taste with salt and pepper.
For White Wine and Dill Sauce:
- Melt the butter in a saucepan. Stir in the flour and cook for 1-2 minutes. Take the pan off the heat and gradually stir in the white wine followed by the milk to get a smooth sauce.
- Return to the heat and, stirring all the time, bring to the boil. Simmer gently for 8-10 minutes and season with salt and white pepper. Stir in the dill.
- Wash the spinach and pop into a saucepan over a low heat until the spinach wilts, then put the spinach in a sieve and press to remove any excess water.
- Place the spinach in the bottom of a baking dish. Put the diced fish on top, pour white wine and dill sauce over the fish, then spread the mashed potato on top.
- Bake in a pre-heated oven for 40 minutes until cooked through.
