These tiny bites are utterly delicious, they taste intensely of blackcurrant, so we cut them into little squares to savour slowly. A pretty box of these would make a lovely gift or to sell at a Christmas fair.
- 1 kg (2 1/4lb) blackcurrants (fresh or frozen)
- 500g (18oz) granulated sugar
- 125g (4 1/2oz) glucose syrup
- 50ml (2fl oz) liquid pectin
- 100g (3 1/2oz) granulated sugar for dusting
- 1x 20.5cm (8inch) square tin lined with parchment paper
Method
Makes 256 x 4cm (1½ inch) square
- Put the blackcurrants into a large stainless steel saucepan over a low heat.
- Cook gently until the fruit has burst and the juice is running well out of the fruit.
- Pass the fruit through a nylon sieve, make sure all of the juice is pushed through and the remaining pulp is dry. Discard the pulp.
- Put the juice back into the saucepan, add the sugar, glucose and liquid pectin.
- Heat gently until the sugar is dissolved, increase the heat and boil, stirring constantly until the mixture thickens. It will read 110°C (225°F) on a sugar thermometer.
- Pour into the prepared tin. Allow to set for a few hours. Cut into squares and toss in granulated sugar. Allow to dry, then pack into pretty boxes.
