- 2 medium carrots
- 5 Medjool dates
- 80g oats
- 1 tablespoon almond butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
1. Add the carrots to the food processor with the oats and process until finely ground.
2. Add the remaining ingredients and process until a dough forms and you can roll them easily into balls. (If the mixture is too wet, add in some flaxseed, if too dry, add a little milk).
3. Roll the mixture into balls and store in an airtight container in the fridge for up to one week.
