Ingredients

The lovely ladies at FoodOppi share their recipe for Santa's Soup!

  • 2 sticks celery
  • 1/2 leek
  • 2 carrots
  • 1 medium sweet potato
  • 1 clove garlic
  • 2 inch ginger
  • 3 tablespoons rapeseed oil
  • 600mls vegetable stock
  • 500mls milk
  • seasoning

Garnish

  • Cooked alphabet pasta letters
  • Christmas tree cheese triangles

Method

  1. Thinly slice the celery and leeks, then rinse under cold water to remove any dirt.
  2. Peel the carrots and sweet potato. Cut into small diced pieces.
  3. Peel and finely grate the garlic and ginger.
  4. In a large saucepan, heat the oil on a medium heat for 1 minute. Then add in the celery, leek, carrots and sweet potato. Cook for 5, stirring all the time.
  5. Next pour in the vegetable stock and milk. Then add in the garlic, ginger and seasoning.
  6. Allow to simmer for 20 -25 minutes until the vegetable are softened.
  7. Use a hand held liquidiser and blend until the soup is smooth. Arrange the cooked alphabet pasta letters on top.

Santa's Soup

Tip: This soup can be made 4 days in advance and freezes perfectly.

To serve: Make the soup extra creamy, serve with a triangle of laughing cow soft cheese.

Give it a festive Christmas look by grating a piece of raw broccoli and sprinkle it over the cheese. Then stick a bread stick or pretzel on the bottom for the cheese to make it look like a Christmas tree.
