This healthy and delicious Pumpkin and Apple Soup is the ideal meal for warming up on a cold October evening!

Ingredients:

  • 2 onions, peeled and chopped
  • 1 clove garlic, peeled and crushed
  • 1 tbsp olive oil
  • 500g pumpkin, skinned and cubed
  • 570ml vegetable stock
  • 300ml dry cider or apple juice
  • 2 sprigs fresh sage

Method:

  1. Heat oil in a large saucepan and add onions and garlic. Cook for 2 minutes.
  2. Add pumpkin, chopped apples and sage.
  3. Cook for 2 minutes, season well and add the stock and cider.
  4. Bring to the boil and simmer for 15-20 minutes until the ingredients are tender.
  5. Liquidise and serve piping hot with crusty bread.
