This is a master recipe, the berries can be replaced with chocolate chips, and the cinnamon can be replaced with a table spoon of cocoa powder and add the grated rind of an orange.

Ingredients

  • 250g Plain flour
  • 150g Melted butter
  • 150g Brown sugar
  • 150ml milk
  • 1 egg
  • 1 teaspoon baking powder
  • Pinch of cinnamon
  • 175g Blueberries

Method

This is a master recipe, the berries can be replaced with chocolate chips, and the cinnamon can be replaced with a table spoon of cocoa powder. And add the grated rind of an orange.

  1. Preheat the oven to 200C.
  2. Put liners into muffin tin.
  3. Place the melted butter, sugar , milk and an egg into a bowl and until combined.
  4. In a separate bowl mix together the flour, baking powder, cinnamon, and salt.
  5. Add the wet ingredients to the dry ingredients and mix together gently, fold in the blueberries.
  6. Divide the mixture between the 12 muffin cases and put in the oven for about 25 minutes until risen and golden brown.
