Pork Medallions with Blackberry and Apple Sauce

Ingredients:

  • 300g pork medalions
  • 2 tablespoons butter
  • 1 large shallot, thinly sliced
  • 15 mls balsamic vinegar
  • 2 teaspoons honey
  • 100g blackberries
  • 100g apple (peeled and diced)
  • 200g new potatoes
  • 300g french beans

Method:

  • In a small pan melt 1/2 tablespoon butter. Saute shoot until tender. Now add the vingear, brown sugar, blackberries, apples and cook until the mixture has reduced and some of the berries have collapsed.
  • In a large pan add 1 tablespoon of oil on medium heat and add the pork loin medallions. cook on both sides until golden and cooked through.
  • Steam the potatoes and french beans until tender.
  • Serve the pork with potatoes and beans and topped with the blackberry and apple sauce.
