Another winner of a recipe from Operation Transformation! Delicious pork medallions with a tangy touch. Watch the video below and get cooking!
Ingredients:
- 300g pork medalions
- 2 tablespoons butter
- 1 large shallot, thinly sliced
- 15 mls balsamic vinegar
- 2 teaspoons honey
- 100g blackberries
- 100g apple (peeled and diced)
- 200g new potatoes
- 300g french beans
Method:
- In a small pan melt 1/2 tablespoon butter. Saute shoot until tender. Now add the vingear, brown sugar, blackberries, apples and cook until the mixture has reduced and some of the berries have collapsed.
- In a large pan add 1 tablespoon of oil on medium heat and add the pork loin medallions. cook on both sides until golden and cooked through.
- Steam the potatoes and french beans until tender.
- Serve the pork with potatoes and beans and topped with the blackberry and apple sauce.
