This healthy and tasty recipe from Operation Transformation makes 8 chicken drumsticks. Perfect for sharing this Sunday!

For the Marinade:

  • 1½ tablespoons of tomato ketchup or tomato purée
  • 1 tablespoon of reduced sodium soy sauce
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of honey
  • 2 teaspoons of wholegrain mustard
  • 1 orange, juice and zest
  • Black pepper, to taste


For the side salad:

  • 25g spinach leaves
  • 25g mixed greens
  • 50g cherry tomaotes
  • 1/2 cucumber

Method:

  1. Mix all the marinade ingredients together in a large bowl and season well with pepper.
  2. Place the chicken drumsticks into the bowl and stir around until all the drumsticks are coated with the sauce.
  3. Cover the bowl with cling film and place on the
  4. bottom shelf of the fridge to marinate for at least a couple of hours.
  5. Light the barbeque and when it’s hot place chicken pieces on top.
  6. Cook the chicken for at least 25 minutes turning regularly making sure that the chicken cooks evenly on all sides
  7. In a large salad bowl, add the mixed greens, spinach leaves, cherry tomatoes, cucumber and toss!
