A clever way to get some veg, herbs or any other healthy alternatives into your kids snacks is with Michelle Darmody's savoury muffins from the Today show on RTÉ One.
Ingredients:
- 120g of self raising flour
- 100ml milk
- 1 egg
- 1 tablespoon of olive oil
- 1 teaspoon baking powder
- 120g of grated cheese, (I use cheddar or Comte)
- Sun-dried tomatoes, crispy bacon bits, herbs, selection of nuts, seeds or whatever you're having yourself!
Method:
- Sift flour and baking powder together.
- Mix milk oil and egg together.
- Add to the flour.
- Add cheese and stir it in well.
- Spoon into 12 bun cases.
- Bake at 180 for twenty five minutes.
- You can add chopped sun-dried tomatoes, crispy bacon bits, or chopped herbs.
